Curry flavoured pumpkin & sweet potato soup

  • 1/2 Butternut Squash, seeds removed, peel of the skin, sliced bites
  • 450g Sweet Potato, peel of the skin, sliced bites
  • 1 Onion
  • 3cm Ginger, peel of the skin with a spoon
  • 2 Garlic Cloves
  • Spices: Curry, Turmeric, Cinnamon, Cumin, Salt, Pepper, Garam Masala, Red Pepper
  • 3 Medium Carrots
  • 4 Tomatoes
  • 1 Young Coconut, remove the water and take out the coconut meat to use (make your own coconut milk and use for topping)
  • Rosemary to top with
  • Pumpkin Seeds to top with
